Suggest a better descriptionHeat olive oil in stock pot and add onions, celery, and carrots. Season with salt and pepper and cook until fragrant and onions are translucent - approximately 4 minutes. Add broth, water, "better than chicken" seasoning, celery leaves, and parsley leaves to vegetables and stir. Add raw chicken breasts and cook for about 4 minutes. Add package of Reames Noodles and simmer for 20 minutes.
While simmering noodles, make a roux by melting butter in a small skillet and adding flour to make a paste. Then add 1 cup of heavy cream to the flour mixture and stir until smooth. Set aside.
Pull out chicken breast from stock pot and shred. Pour the roux mixture into the stock pot and stir. Add the chicken and sherry and simmer for about 2 minutes . Add final seasoning of salt and pepper to taste. Serve and enjoy!
