Suggest a better description1. Drain the soaked beans. Combine with all other ingredients, add enough cold water to cover.
2. Bring to boil over high heat. Reduce to simmer, 2-3 hours until gray has formed. Add 8 ounces of water toward end of cooking if is dry.
3. Remove the ham hock and cut meat into ½” cubes. Return to beans.
4. Serve with rice.
