Can soak beans by boiled and let sit for 1 hour. Heat butter in large pot and add onion bell pepper celery and cook until soft. Add garlic, salt and pepper and cook 3 more minutes . Add smoked ham hock, beans and liquid crab boil, thyme, creole seasoning and stir. Add enough water to cover beans ( about 2quarts) . Stir and bring to a boil, then reduce heat to medium, let simmer, stirring occasionally for about 1 1/2 hours, adding 1/2 cup water at a time if beans get too thick. Add sausage to pot and let beans cook 30 more min or until beans are tender. Can smash some beans on side or add some cornstarch (2 tbls) to cold water and add to thicken , serve with white rice.
