Soak beans overnight. Remove suspect materials. Chop ham and saute in oil with onions and garlic over medium heat until steam subsides. Add remaining ingredients including drained beans. Cover and bring to boil over medium heat. Reduce to simmer and cook 3-4 hours. Watch consistency and uncover or add water as needed.
Serve with cornbread or plain rice, and hot sauce.
