Red Cauliflower
Chop onion finely and place in bowl. With a zester, pare off small strips of lime zest, and add to onion in bowl. Cut the lime and Include the juice from the two halves of the lime into bowl as well. Wash and cut the cauliflower into florets. Put the canned tomatoes into a pan and add the chiles and sugar. Heat gently. Meanwhile, place the cauliflower into a pot of boiling water and cook gently for 5-8 minutes. Add the onions to the tomato salsa with salt to taste. Arrange the drained cauliflower florets on top of salsa and spoon remaining salsa on top on a serving plate. Sprinkle the feta, which should be softened a bit on contact. Serve immediately and sprinkle with some chopped fresh flat-leaved parsley.
