Basic red sauce/chile sauce/condiment that's good on a lot of things.
I make a big batch every week and keep it in the fridge.
The portions in this recipe are about enough for a week.
Soak mulatos in container of water for at least 3 hours.
Soak chipotles in container of water for at least 3 hours.
Seed chiles
peel and roughly chop onion
peel and roughly chop garlic
Put everything in food processor and run until smooth.
~ 10 minutes
Change out with different chiles / different taste
Add/Remove chipotles to change spice level.
Add/Remove salt to taste.
