In a mixing bowl, combine the crumb mixture.
Pat half of the crumb mixture, into the bottom of a square 9" pan.
In a sauce pot, mix sugar and cornstarch. Add the water and vanilla. Boil until it thickens.
In the pan, spread the rhubarb over the crumbs. Then pour the liquid mixture, over the rhubarb.
Top with the other half of the crumb mixture.
Bake at 350 for 1 hour.
