This dessert is comfort food. It can be made with apples or rhubarb or both. Serve with custard, ice cream or whipping cream.

1). Preheat oven to 375
2). Combine the rhubarb and brown sugar and place in a buttered 1.5 litre (6 cup) ovenproof dish
3) In a bowl, cream together butter and sugar until light and fluffy. Add the egg and mix well
4). Sift together flour, baking soda and salt. Stir into creamed mixture and mix to a soft dropping consistency. If the batter is too stiff, beat in a little milk. Spread on top of the fruit.
5). Bake for 35 minutes or until fruit is soft and bubbling and the topping is light-brown.
