Suggest a better descriptionPre-heat broiler. Season both sides of the steaks lightly with pepper. Broil 2 to 3 inches from heat for 3 to 4 minutes per side for medium-rare. Turn only once, with tongs, to prevent juices from escaping. Adjust cooking time based on desired doneness. While steaks rest, cut cheese into small pieces and set aside. Peel and chop the shallot very finely. Melt butter in a small saucepan over medium heat. Add shallot, crushed garlic and pepper. Sauté 1 minute. Add beef broth and brandy. Stir in cheese. Heat 3 to 4 minutes until cheese melts and sauce is bubbly. Remove from heat and let cool slightly. Serve steaks whole or carve into slices. Season lightly with salt to taste. Top with sauce.
