Rice substitute for low carb diets.
Chop thawed cauliflower in food processor until the size of rice grains.
Bring water to boil in medium saucepan.
Add cauliflower, butter, salt, and pepper.
Simmer 5-7 minutes or until cauliflower is soft.
Use in recipes as you would use rice (stuffed peppers for example),
or serve with Indian/Asian dishes as a side.
