This delicious rice was made by Lulu for us at Lakeside - excellent!
1. Dice onion, chop cabbage thin, and mince garlic.
2. Saute' onion in olive oil for 4-5 minutes, add cabbage for another 2-3 minutes, and then garlic for another minute.
3. Add rice to pan and saute further for 5 minutes, adding oil if necessary to coat.
4. Salt & pepper to taste.
5. Add chicken stock about two finger widths above rice, and boil until rice is soft, maybe 20 minutes.
Excellent to serve with Lulu's beans! (Saute diced onions for a long time, add garlic, then rinsed pinto or kidney beans, season and serve.)
