Rice Pudding is a traditional Danish treat for the holiday's or any special occasion
1) Cook rice and milk together, along with the vanilla beans and salt, in a double boiler or on very low heat with constant stirring until the rice is thoroughly cooked.
2) Remove vanilla beans, cut open and scrape vanilla seeds out of pods and put the seeds in the rice mixture. Discard the pods.
3) Whip 1 to 1.5 pints of heavy whipping cream until stiff.
4) Add vanilla extract and powdered sugar to the whipped cream to taste.
5) Gently fold the whipped cream and the slivered almonds into the rice mixture, using enough whipped cream so the rice mixture is loose and easy to stir.
6) Danish tradition: Bury one whole almond in the mixture. Whoever discovers the almond in their serving wins a prize.
7) (Optional) Top with raspberries or your choice of berries, fresh or frozen, sweetened to taste with sugar, just before serving.
