Emma O'Donnell's recipe
Over high heat, bring milk, rice, sugar & salt just to boiling. Reduce heat to low. Cover & simmer 45-60 min, until rice is tender. Stirring occassionally.
In a small bowl beat eggs slightly with a fork. Stir in a small amount of the hot rice mixture. Slowly pour egg mixture, stirring rapidly to prevent lumping. Cook stirring constantly until rice mixture is thickened(about 5 min. Do not boil or mixture will curdle). Remove from heat. Stir in vanilla extract. Sprinkle top with nutmeg.
