Suggest a better descriptionMeasure 2 cups of cooked rice into a saucepan. Add 1\2 water, cover, and simmer until all water is absorbed. About 2-3 minutes.
Add 2 cups of milk and boil gently while stirring for 5 minutes or until mixture thickens.
Add milk-rice mixture to bowl mixing in 2 beaten eggs, 1\3 cup sugar, and 1 teaspoon vanilla.
Mix well and pour into 1 1\2 quart greased casserole. If desired sprinkle with cinnamon or nutmeg. Or 1\4 cup plump raisins.
Place casserole dish in pan of 1 inch hot water.
Bake in preheated oven for 45-50 minutes. Or until knife comes out clean.
Serve warm or chilled.
