Just like the Mushroom Eggplant, it is perfect as a vegetarian side dish; to accompany dishes of all kinds: from a second course of meat such as sliced beef, to fish, to the classic Sardines a beccafico, eggs, cheeses; just like the Peperonata, the Caponata can also be served hot or cold! It is also excellent for filling Sandwiches, Pizzas, Focaccia, Cold Pasta, Crostoni, Bruschetta and Friselle; as an appetizer!

First of all, clean the vegetables, dice the eggplant, celery and tomatoes, if they are too big, if they are small like mine, just divide them in half.
In a large frying pan, fry the aubergines in plenty of oil for 3 – 4 minutes, the time until they are golden brown. Drain well and set aside.
In a large frying pan, add the finely chopped onion along with 2 tablespoons of extra virgin olive oil. Sauté for 2 minutes. Add the tomato puree, leave to flavor for 1 minute, add the diced celery:
Then add the pitted olives, capers and cherry tomatoes. Cook for 3 minutes over low heat.
Finally, add the fried eggplant:
A handful of basil. Let it cook for 2 minutes.
Finally, add the tablespoon of sugar, vinegar, let it evaporate over high heat, complete with the addition of salt and, if necessary, pine nuts, previously toasted in a pan for a few minutes.
Store in the fridge for 1 week tightly sealed. You can easily freeze it for the winter in single portions
