Add the garlic, rosemary and olive oil to a blender, and blend until smooth.
Toss the medallions in the garlic-rosemary mixture until well coated.
Heat a griddle until it is very hot. Add a generous coating of olive oil, and reduce to medium heat.
Add the medallions to the griddle and sear them on both sides - about 2 minutes per side, depending on the heat of the griddle. Remove them before they are overcooked.
