Put dry macaroni elbows in a pan (approx. 9x13) - dry macaroni, no need to pre-cook
Melt Butter and pour over macaroni
Give it a stir
Add Cheddar Cheese (save small amount for final topping)
Give it a stir
Add Colby & Monterey jack (save a small amount for final topping)
Give it a stir
Add Milk
Give it a stir
Add Heavy Whipping Cream
Give it a stir
Add Salt & Pepper to taste
Give it a stir
In to smoker at 250f for 1hr 50min stir lightly mid-way thru the cook.
Sprinkle a layer of shredded cheddar, colby, monterey jack across the top - melt and brown in broiler or with torch.
