Traditional Southern Broccoli Casserole with Ritz cracker top.
Cook chopped broccoli until tender in salt water. Drain broccoli well in colander and then place in bottom of casserole dish. Blend onion, mayonnaise, soup and well beaten eggs. Pour over broccoli. Top with shredded cheese. Prepare crackers by combining crushed crackers with melted butter and then topping the casserole with this mixture. Bake at 350 degrees for 30 minutes.
Make sure the broccoli is drained really well or it will become watery. Also, you can use more cheese; just make sure that the top of the casserole is completely covered.
