In a small bowl, place the garlic, salt, pepper, paprika, mustard seeds, brown sugar and rosemary and stir to mix.
Place the roast in a roasting dish and rub it with mild American mustard, then cover evenly with spice mix. Pour the white wine and the water in the base of the dish so the liquid settles around the roast.
Cover the dish with a large piece of baking paper and then foil sealing it well. Slow roast works better (140 degrees over 2 hours per kg of meat) - basting 2-3 times during cooking until meat is very tender.
