1) add oil to cover the bottom of a big skillet
2) let the pan get hot, brown the roast on each side (med/high temp), pour off excess grease
3) Fill with 1 1/2 - 2 cups of water
4) Place onion slices on top of roast, salt & pepper
5) Place lid on skillet, when lid is hot turn down the temp (low/med)
6) Turn the roast over approx every 30 mins
7) Let roast cook for 2 hours
8) Peel potatoes & cut length long, then in half. Place around roast
9) pour package of dry onion gravy and add 1 cup to 1 1/2 cups of water over the top of the mix.
10) move temp up to med/high, let cook for 30 mins - 1 hour.
