This can be made with pumpkin, kumera or carrots
Prepare marinade with all ingredients except vegetables.
Prepare vegetables, put in roasting tray (baking paper on the bottom helps clean up), mix in the marinade.
Fan bake at 150 degrees for around 30 mins or until soft. Turn half way through.
Can be served hot or very yummy cold too.
