Roasted Almonds
Heat oven to 300 degrees F.
Put almonds in a heat-resistant (such as stainless steel or Pyrex) mixing bowl and add olive oil. Mix well to thoroughly coat the almonds with oil.
Place the almonds on a cookie sheet, being careful to spread them out in a single layer.
Roast almonds for 15 to 20 minutes until the center of a nut is slightly golden and they become aromatic.
Remove the almonds from the oven and put them in the heat-resistant mixing bowl that was used earlier. Immediately add thyme into almonds, mixing well. The heat and oil will crisp the thyme.
Let cool completely and add salt. Allow almonds to sit overnight for the best flavor.
