For Beets:
Preheat oven to 375. Clean beets, coat generously with EVOO and salt, wrap in aluminum foil and bake for 50 minutes. Remove from oven and cool. Slice into 1/4 inch slices, then into 3/4 inch cubes or 1/2 x 3/4 inch rectangles.
For Filling:
Combine blue cheese and marscapone in mixer. Add fresh black pepper. Add enough heavy cream to make smooth enough for piping.
For Balsamic reduction:
Bring balsamic vinegar to boil, reduce to simmer until reduced by half
For Bacon:
Render over low heat until very crispy, crumble.
To Assemble:
Front load 1/2 tsp balsamic reduction on spoon. Place one slice of beet on spoon, add bacon then pipe dollop of cheese mixture on top of bacon. Top with second slice of beet, finishing salt, and garnish with chive.
