1. Preheat oven to 400 degrees.
2. Cut about 1/2 inch off the top of the garlic head.
3. Place the garlic in a small baking dish or a garlic roaster, cut side up. Cut the bottom to flatten it our if necessary.
4. Pour the EVOO over the exposed cloves, sprinkle with salt and pepper. Cover the dish.
5. Roast for 45 minutes to 1 hour until the cloves are very tender.
