Suggest a better description1. Smash heads of garlic lights to loosen but not completely separate cloves, 2. Place on large sheet of aluminum foil or in small casserole with lid. 3. Drizzle with oil and season with salt & pepper. 4. Wrap foil into tight packer or cover dish with lid. 5. Roast 1 hour until soft. 6. When cool enough to handle, peel by squeezing each clove at the end so it pops out of the skin. Yields 1/2 cup of mashed garlic.
