With its space alien appearance, kohlrabi is often passed up at farmers markets. Too bad, because it is very versatile. Roasting it is one of my favorite ways to enjoy it.
1. Preheat the oven to 450 degrees.
2. Remove the stalks and leaves of the kohlrabi. Using a paring knife peel the kohlrabi removing the outer skin and 1/8-inch of the flesh. Cut the kohlrabi into 1-inch dice. Place in a shallow baking dish.
3. Toss with the garlic, oil, and 1/4 teaspoon salt. Roast the kohlrabi, tossing occasionally, until well browned, 30 to 35 minutes.
4. Remove from the oven the discard then garlic pieces. Season with pepper, if desired.
I sometimes toss the roasted kohlrabi with freshly grated parmesan cheese.
