Good side to a roast
Put olive oil into a roasting pan.
Cut up all vegetables and add to roasting pan.
Put fresh spices randomly throughout pan.
For sauce:
Combine cream cheese, milk, lemon zest, and 1 sprig of thyme.
Mix until smooth.
Pour over veggies.
Roast for about 30 min with aluminum foil
Remove foil and roast for additional 15 min or until veggies are soft.
