On outdoor grill or under broiler cook the whole peppers until charred and blackened on all sides.
Remove from heat source and wrap in brown paper bag or place in a covered bowl for 30 minutes to steam.
Remove the skin, stem and seeds leaving only the flesh of the peppers.
Season with kosher salt and freshly ground pepper.
Serve as an appetizer along with cheese, crackers or bread.
