Beef Chunks with peppers and onions
Rub meat with the mixed spices: Brown Sugar, 1 t. chili powder, and 1 t. cumin. Put in fridge to let flavors mix for 30 min. In dutch oven/ large pot put the chopped peppers, onions, and celery, and the remaining 2 t. cumin and (remaining) 2 t. chili powder and cook in batches over medium heat. Put cooked batches to the side. In same pot mix tomatoes, sauce, molasses and add in the veggies. Then add in the beef and mix. Turn down to medium-low and cook for 45 min. Add any salt or pepper as final seasoning if needed. Garnish with green or red onions, sour cream.
Serve with corn bread
Be careful not to overcook the beef for too long or on too high of a heat.
