Chop the garlic and the tomatoes. Tear up the baby spinach. Put in bowl with elk and lamb. Add bread crumbs, 1/3rd of the olive oil, and the egg. Knead until mixed, slowly sprinkling in two tablespoons of the kefta spice.
Put second third of oil into bottom of a tangine. Roll meat mixture into balls and line the bottom of the tangine. Sprinkle the herb de Provence on top, along with a tablespoon of kefta, sea salt and remaining olive oil.
Put lid on tangine. Bake covered for 1:15 minutes at 400 degrees. Remove cover and bake for an additional ten minutes afterward.
