A southwest chicken soup. Started out following a recipe and veered so much from it that I had a new dish.
put first 5 ingredients in pot. Bring to boil.
Add chicken. Let simmer for at least one hour.
Remove chicken and shred.
Return chicken to pot. Add rice.
cook another 30 minutes or until rice is done.
serve with tortilla chips and cheese
other topping ideas: avocado, sour cream, cilantro
for a more soupy dish, omit the rice.
