Yummy egg and cheese casserole
Preheat oven 400 degrees.
Combine eggs, flour, baking powder and butter. Whisk vigorously to get lumps out. Stir in Chilis and cheeses.
Pour into a well greased 8x8 pan.
Bake 10 minutes
Put thinly sliced tomatoes on top
Bake 15-20 minutes more checking for browning on top.
Don't overcook.
Serve with salsa and sour cream.
Note: for 9x13 pan make 1 1/2 recipe
I used a glass pan which worked really well. Be sure to check it at the 25 minute mark (total baking time) for browning on top and remove from oven immediately so it doesn't over cook.
