Classic Gulf Coast Southern Style Sweet Potato Pie

Prepare 1 Pie Crust in (preferably glass) deep-dish pie pan.
Peel and slice sweet potatoes in thick slices. Boil until fork-tender.
Preheat oven to 350 degrees Fahrenheit.
While oven heats --
Cream butter and sugar in a large bowl until light and fluffy.
Add salt and allspice, beating well.
Add eggs and beat until smooth.
Mash the sweet potatoes, which should be about two cups when smashed.
Add mashed sweet potatoes to the batter and beat until entirely smooth with no strings apparent.
Pour batter into your pie crusts and bake on center rack until a pick comes out completely clean.
Cool pies on a rack and serve with a dollop of fresh whipped heavy cream or creme fresh.
Stay off the scale until you have worked off the pie-pounds! Yum!
If you have a strong blender like a Vitamix, you will be able to cut the blending time in half, at least.
MAKE YOUR OWN PIE CRUST! It's easy and so much better than a store-bought crust.
Just remember to use the 3-2-1 method with ice-cold butter and ice-water and don't overwork the dough!
