1. In a skillet over medium-high heat add pancetta and cook one minute.
2. Add the garlic and sage, cook for one minute.
3. Add the corn kernels and cook for 1 minute.
4. Season with salt and pepper.
5. Pour in cream and simmer until it is reduced by half, about 4 to 5 minutes.
To serve more guests, double the corn, no need to double the rest. Original recipe called for ½ cream – too much.
