Every time I eat this salad, I can't believe how good it is. The char and warmth of the romaine is what makes it so good. It uses one "Caesar Salad Dressing" recipe from my dressings file.

1. Make dressing according to recipe
2. Grill Romaine: Turn all burners to high, cover, and heat until hot, about 15 minutes, depending on your grill. Leave the burners on high. Clean and oil the grate. Brush the bread with the oil and grill uncovered until browned about 1 minute per side. Transfer to a platter and rub on one side with the garlic clove.
3. Brush the cut sides of the romaine with dressing and grill uncovered until lightly charred (do in batches if your grill is not big enough). Plate drizzle with dressing, top with cheese and serve with croutons.
