Features tomatoes - great in late summer
Heat the oven to 400 F. Toss bread cubes with half the olive oil. Spread on a baking sheet and bake for 10 to 12 minutes, turning the bread cubes once, or until bread is lightly toasted on both sides.
In a large bowl, combine toasted bread with all other ingredients. Toss and serve. Refrigerate any leftovers.
This salad preparation could be shortened by using any brand of salad croutons you wish. Use only 1/8 cup of olive oil with the other ingredients.
