This makes a nice moist seafood loaf. As well as salmon, consider other canned, or fresh seafood.
1. In a skillet, saute celery and any other vegetables (except green onion) in oil until tender.
2. In a bowl, combine the salmon, egg, milk, bread crumbs, salt, pepper and celery mixture. Transfer to a greased 5 3/4" x 3" x 2" loaf pan.
3. Bake at 350 degrees F for 40-45 minutes, or until a knife inserted near the center comes out clean.
