Salmon with cranberry and mustard sauce
Preheat oven to 450. salt and pepper fillets. Spray baking sheet with non stick spray. Place fillets skin side down on baking sheet. Spread dijon olive oil mixture over fillets. Bake at 450 for 11-13 minutes.
While salmon is baking, combine cranberry sauce, mustard, shallots, olive oil, red wine vinegar and brown sugar in pan. Stir over med heat until boiling.
Check salmon after 11 minutes, remove or keep baking to get it like you like it.
