Simple multi-purpose
Large skillet, heat oil medium heat, brown chicken about 2 mins each side, golden brown. Remove chicken, set aside, brown onion till translucent. Add chicken back to pan with onion, add salsa, simmer on low until chicken falls apart. Serve over rice sprinkle with cilantro, with refried beans and corn, warm tortillas. Or use the chicken to make enchiladas, tacos, casserole.
