Suggest a better descriptionMake the batter by mixing the cornflour, 1 tablespoon of baking powder, bicarbonate of soda, pinch of salt, twist of black pepper, dash of sesame oil and water and mix all ingredients together well. Drain juice from oysters, pat dry and dip into the batter. Deep fry for a minute then remove. Add groundnut oil in a pan, add ground Schezhan pepper, Chinese five spice and garlic. Add the oysters, give it a good shake and put in a dish.
