Pork
Procedures:
1 In a large bowl combine the cubed pork, soy sauce, sherry and flour.
2 Leave for 20 minutes.
3 Pour the oil into a wok or large frying pan.
4 When it is quite hot (Level 8 on big burner), add the pork.
5 Fry for 5-6 minutes or until golden.
6 Remove the pork and pour off all but 3 tablespoons of the oil.
7 Add the chopped garlic and fry for a few seconds.
8 Add the remaining ingredients, fry for a few seconds to warn the spices through, then add the pork.
9 Fry, stirring almost continuously, for a couple of minutes.
10 Serve while hot and sizzling
