A few changes to the original recipe turned this into a great easy to prepare supper. My wife actually went back for seconds something she seldom does.
Potatoes - peel and slice add to a pot of cold water along with 3 cloves of garlic. Cook until potatoes are soft. Drain, add 1/2 tbsp of butter and mash.
While potatoes are cooking brown beef at medium high heat in a large skillet. While browning the beef add the 3 chopped cloves of garlic and the chopped onion. Cook until beef is well browned and onions are soft.
Add 1/2 of the soup, chili, powder, parsley, pepper, corn and peppers. Stir until warm and pour mixture out into shallow baking dish.
Top meat mixture with the mashed potatoes. Sprinkle some bread crumbs and the parmesan cheese on top of the potatoes
Cook in oven preheated to 400? F for about 20 minutes.
