Clean the scales from the fish and eviscerate them. Remove the backbones and heads if they upset you. Combine the eggs, milk, flour, and cayenne pepper in a bowl and beat well. Add salt and pepper.
Heat at least 4 inches of oil in a large pan. Holding the fish by their tails, dip them in the batter and then drop them in the hot oil until they are golden brown, about 3 minutes.
Remove the sardines from the oil and pile them on a piece of absorbent paper. Sprinkle with salt and pepper and serve with a large glass of beer!!
