Combine milk and next 6 ingredients (through eggs) in large bowl, stirring with a whisk. Trim crusts from bread. cut bread into 1" cubes. add bread, sausage and cheese to milk mixture, stirring to combine. Pour bread into 13x9 casserole dish coated with cooking spray. cover and refrigerate overnight.
Preheat oven to 350. remove casserole from fridge and let stand 30 minutes. sprinkle with paprika. Bake for 45 minutes until set and lightly browned. Let stand for 10 minutes before cutting.
