Rough chop mushrooms and cook; then strain in sieve.
Combine sausage, mushrooms, cheeses, egg yolk, salt and pepper in food processor and pulse until smooth.
Prepare Basic Filled Pasta Dough through sheeting process.
Lay pasta sheet flat on lightly floured surface again. Cut into 6 inch pieces and cook in boiling water for 2 minutes. Remove from water and place on oiled surface, leaving oiled plastic wrap between pieces.
Spoon sausage mixture into top 1/3 of sheet, form into a log as you go, leaving 1/2-inch from ends. Fold pasta over from top half, tucking pasta under, and trim excess from edge (leave 1/2-inch from edge). Place seam edge down and cut into thirds, placing finished pasta in oiled baking dish. Repeat with remaining sheets and cover pasta with tomato sauce.
Bake at 350 degrees for 20 to 30 minutes.
