My twist on a Texas style chili
- For the sausage chop into small bite size pieces. Using partially frozen links makes this easier. Season and mix sausage with salt, pepper, and onion powder.
- In a large dutch oven, cook bacon until crispy. Remove from pan and set aside until later.
- Pour rendered bacon fat into bowl and set aside.
- Increase the heat to medium-high. Using the bacon fat, brown the sausage in multiple batches making sure not to crowd the pan. You want to develop as much browning on the sausage as possible and browning in small batches will ensure that moisture coming from the meat won’t crowd the pan and prohibit the browning process.
- Once all sausage has been cooked, again, pour out the rendered fat into a bowl.
- In the same pot, add the diced white onion and shallot. Use some reserved meat fat if necessary. Cook down, scraping the bottom of the pan to release the brown bits and brown the onion. Reduce the heat if necessary to cook the onion down and slightly caramelize it.
- Add in all of the spices and stir into the onions. Cook 2 minutes.
- Add the pressed garlic and stir. Cook 1 minute.
- Add the seared meat back into the pan. Add the coffee, liquid smoke, crushed tomatoes, and the beef broth. Stir well.
- Crumble in the bacon.
- Place the lid back on the pot and cook over low-medium (simmer gently) for 2 ½ - 3 hours. Add additional beef broth if necessary.
For this dish, it is essential to cook the sausage in small batches. You will miss out on so much flavor if you don't do this. Make sure you do small enough batches to develop that dark brown crust on all the sausage.
I used sausage links chopped up, but ground sausage in large chunks could be used too.
