In a heavy pot, warm the oil over low heat. Add onion and garlic for 5 minutes.
Add eggplants, zucchini, and peppers. Cook for three minutes.
Add tomatoes and season to taste with salt and pepper.
Cover and cook over gentle heat about 40 minutes. If necessary, add a bit of water.
