- rinse spinach
- dice onion and garlic
- lightly toast almond slices in the oven (6 or 7 minutes at 350)
Cooking:
- Add 1 tbsp olive oil to a Dutch oven or other large pot.
- Add 4 slices of bacon and cook until desired crispness. Remove and set aside leaving grease in pot.
- Add onions to the bacon grease and cook onions until soft.
- Chop bacon.
- Add garlic to onions and cook for 2 more minutes.
- Add spinach, bacon, almonds, and vinegar and sauté over low-med heat until spinach is just wilted.
- Salt and pepper to taste
- Transfer to serving dish and mix in parmesan (may not need all of the Parmesan, add the amount that suits you)
Overall a very flexible recipe, if you like more or less of an ingredient adjust accordingly.
