Suggest a better descriptionCut pumpkin slices into 1-inch cubes. In a 12- to 14-inch saute pan, heat olive oil until smoking. Add pumpkin and garlic and cook until light golden-brown, about 4 to 5 minutes. Add pepper, vinegar and honey and bring to boil. Cook until liquid is reduced to syrup around pumpkin, about 1 minute. Remove from heat, add mint and serve. This recipe yields 4 servings.
