Place the onions into a bowl and pound them slightly to release their flavor.
Add the remaining ingredients and mix well.
Place a layer of onion mixture into a dish, place the pork loin on top and press into the onions mixture.
Cover with rest of onion mixture and press the onions into the meat.
Marinate for at least 3 hours, covered, in the refrigerator.
Grill slowly over hot coals or broil for about 15 minutes until 160F inside. Do not overcook.
Let sit for five minutes before serving.
